I don't think there's any "side" to take unless the customer is
complaining about "which" of the values is being used. Then they have
nobody to blame but themselves for populating it in the first place.

Assuming that's not the case, then all that's required here is just
clearly noting that any time you have multiple values, an SP should take
whatever one it wants and shouldn't have to go ask about it. That's just
work it shouldn¹t have to do. Attribute standards are worthless if we try
and impose constraints that aren't part of the attribute definitions.
