SP2.5 is failing to start : CRIT Shibboleth.Listener : failed to bind to socket.

Neither is part of a standard installation, so if you customize things,
that can't be accounted for in an upgrade. A standard 2.4.3 install
upgrades correctly if and only if files are in the normal places and the
only private key is called sp-key.pem. Deviate from that, and it will
*not* work without some adjusting. Not with an RPM upgrade anyway.

Because shibd is now running as non-root. Please refer to the page
referred to in the RELEASE.txt and the announcement on significant
configuration changes.
